A little about Meinecke Farms and the family |

Meinecke Farms is a beef cattle farm located in Millington, MI. It is owned and operated by the family of John Henry Meinecke. We farm between 700 and 800 acres mostly dedicated to the production of beef cattle with a small amount of cash cropping. We currently raise alfalfa, corn (for both silage and grain), soybeans, and wheat. We have a herd of approximately 120 head of cattle, Hereford and Angus consisting of; cow/calf (pictured below), feeder steers, replacement heifers, and finish steers. The work on the farm never seems to be caught up, like most farms, when we wake up in the morning we are at work, and when we go to bed at night we are still at work. It's not a job or occupation, it's a way of life, one that we enjoy very much. It is our hope that we can share with you some of the "country farm" goodness and hospitality that we are fortunate enough to enjoy every day. |

We've been pretty busy around here, trying to put hay up between the rains, and building a new feeder wagon for the steers when it does rain. All this with our every day chores of feeding the cattle, shipping cattle, cleaning barns, mowing the yard (5 acres) and in the house stuff keeps Kellie and I pretty busy. Recipe of the week Lamb Chops Supreme In a large skillet brown 6 lamb shoulder chops in 2 tablespoons of hot cooking oil, sprinkle with salt and pepper. Drain off fat. Add 3/4 cup water, 1/4 cup finely chopped celery, 1/4 cup sliced green onion, 1 teaspoon instant beef bouillon granules, and 1/2 teaspoon dried thyme. Cover and simmer 20 to 25 minutes or until tender. Remove chops to a platter and keep warm. Skim excess fat from drippings and set drippings aside. Sauce; Combine 1/2 cup dairy sour cream, 1 tablespoon all purpose flour, and a dash of pepper. Slowly stir in the reserved drippings. Return mixture to skillet. Add 2 1/2oz. sliced mushrooms drained,and 2 tablespoons snipped parsley. Cook and stir until thickened (just to a boil). Pass the sauce with the meat.
