The Eye of Round Roast is cut from the muscular, rear leg of the beef. Our cows get lots of exercise out in the pasture, so this cut of roast is lean and does not naturally have a lot of fat. That means the size of the roast should be pretty true for serving sizes, it will not shrink down much while cooking. Our butcher cuts each Eye of Round Roast at a lean 3lbs each, so they are the perfect size for the instant pot!
Helpful Hints & Cooking Tricks
A good cooking method for this roast would be to sear the outside to lock in the juices at a high temperature, and then pressure or slow cook at a very low temperature. Serve the roast beef in thin slices like a thick-cut deli meat and save the leftovers for roast beef sandwiches!
