What You're Getting

The Filet Mignon is an extremely tender cut of steak. This steak is cut from the Whole Beef Tenderloin which is a highly prized beef roast cut from the top loin near the spine. This thin supportive muscle is rarely used, so it develops almost no fat, and extremely fine marbling. Our butcher will trim off all of the tough, silver skin membrane and then cut the filet mignon steaks from the thicker, top portion of the loin into 2 inch sections, so that they are nicely shaped for you. Our filets will come vacuum sealed in freezer-safe packaging which will squish them down a little, so be sure and give them a chance to rest and reshape before you cook them. Learn more about this meat cut on our blog with our Blog Post: Meat Cut Highlight - Filet Mignon and be sure to check out the post about our Filet Mignon Bundle too!

Farming Practices

All of our cows here at John Henry's are grass-fed and grass-finished. We raise them locally on our family farm, and they are never given any hormones or antibiotics. Our fields and feed are never exposed to harsh chemicals or pesticides. Our cows are pasture raised and love to spend their days being outside with either their faces towards the sun or their rears towards the wind!
