The hock is a joint, cut from between the lower leg and the foot of the pig. This cut contains a lot of tendons and ligaments which will break down during slow cooking and infuse your dish with both the incredible smokey flavor and a rich, silky texture as well.

All of our pigs here at John Henry's are fed a mix of non-GMO corn, oats, and alfalfa, and they also love to rut around in the dirt outside looking for more snacks to eat! They are raised locally, and they are never given any hormones or antibiotics. Our fields and feed are never exposed to harsh chemicals or pesticides. Our pigs are pasture-raised and spend their days being outside as much as they wish!
Our Smoked Polish Sausage, or traditional Kielbasa, is made with our pasture-raised Ground Pork, blended with a perfect mix of spices, packed in casings, then smoked for incredible flavor. Each package of polish sausage contains 2 - 10" smoked sausage links.
The Ribeye Steak is moderately to very marbled making it very tender and one of the most flavorful steaks available. Our butcher slices the Ribeye’s into 1” thick steaks. You will receive 1 steak per package.
