John Henry's Pork Butt/Shoulder Roast

1 can of Coke, Pepsi, Dr Pepper, etc.
Sea Salt

  • Add water to the Instant Pot, insert trivet/tray and place roast on top of it in the Instant Pot.
  • Pour half the can of soda over the meat then sprinkle on generous amounts of the sea salt, pepper and cinnamon.
  • Add 2 scoops of brown sugar to the seasonings and mix it into a paste. Rub the paste into the meat so it is well coated in the sugar paste.
  • Flip the roast over and repeat in the other side, using up the rest of the soda. Make sure the paste is all over, around the sides, and in all the little cracks.
  • Cook on high pressure for 20 minutes per pound. Allow to natural release for best texture.
  • Serve with mashed potatoes and veggies!
