We want you to be able to make good decisions on the products you purchase. To help ensure that you make an educated decision, we thought we would share with you some interesting facts about the meat industry.

Did You Realize?
If cattle are more than 50% black in color they may be sold and marketed as  Angus beef. Many Holstein dairy animals qualify to be sold as Angus beef. If imported meat is removed from its original container to be cut or processed in any way in the U.S., the resultant product does not need to bear "country-of-origin" labeling. Therefore, beef sold in supermarkets does not have to label where the beef was raised. It could be Canadian, Argentinean, New Zealand, or maybe even U.S. beef, you just can't be sure!


Product of the U.S.A.
A labeling term permitted by FSIS (Food Safety Inspection Service) is applicable to products that, at a minimum, have been prepared  (sliced, cut, heated) in the U.S.. Here's how this affects you: it's not that foreign beef is necessarily of lower quality than American beef but they are not graded and inspected the same as the USDA does here in the states. For example, what the Brazilian government considers choice beef may not qualify for that same choice grading by the USDA. Here's the catch: once it's graded in Brazil or any other country it automatically holds that grade level in the U.S.!

Origins
It has been estimated that over 95% of the beef sold in grocery stores comes from one of three main meat processing companies; IBP, Monfort, and Excel. Grocery stores usually receive this boxed beef either in primal or sub-primal cuts. Almost always this beef is cut within one or two days of slaughter leaving no time for dry aging (a natural way to let meat tenderize and gain flavor).

About Poultry
Fresh poultry, as defined by the USDA, means that the internal temperature of the bird has never been below 26 degrees Fahrenheit. The date of processing is not a factor. Free range or free roaming poultry, as defined by the USDA, means that the producers of these birds must demonstrate to the USDA that the poultry has been allowed access to the outside.
